Good gracious, I’m so happy to see that we’ve made it to Friday! We started strong this week, but have been buried in Kleenex the last few days. Ugh.
We’ll start with Prissy since she’s been such a busy little thing. Letter D has been in the spotlight for her this week and she’s had lots of fun. From dinosaurs (RAAAAWWRR- she does that nearly every time she says that word) to donuts to snacking on “dirt,” she’s enjoyed her week with Letter D. Our books for this week were If You Give a Dog a Donut, Dinosaur!, Dogs: The Sound of D, and Red (Colors All Around Us).
The Boy has been in bed with a yucky cold most of the week, but he did have a chance to show off the hard work he put in to memorizing Robert Louis Stevenson’s “My Shadow.”
Lastly, our homeschool group’s Japan dinner was this week. I’m so happy we made that happen before The Boy got puny. The Boy shared his research on samurai and ninjas and Prissy shared her painting of a cherry blossom tree. Her presentation lasted about 30 seconds; I just wasn’t able to get a picture of her presenting! Oh, and the food was amazing. The other parents in the group put some major effort into their dishes and it was all so, so good! I was admittedly a slacker this time: I brought this Japanese Onion Soup and some frozen edamame that I shamelessly just threw in the microwave before serving.
- Crockpot Chicken Fajitas – This was probably my favorite thing that showed up at our table this week. These fajitas were easy and delicious. Also worth noting, Hubby was all about these! These are definitely worth a try if you need a new crockpot meal.
- Avocado Chicken Salad – I make this from time to time to eat for lunch when Hubby won’t be joining us. I love avocado and I love chicken salad; naturally, this is a great combination for me!
- Mac & Cheese in a Mug – I tested this out earlier in the week when Prissy requested mac and cheese for lunch. Since The Boy hasn’t been the bottomless pit he normally is (bless him), this single serving method was the perfect solution.
- Garlic Chicken with Rosemary and Lemon & Pesto Mashed Potatoes – Dinner tonight was a Flashback Friday of sorts. I changed my mind at the last minute and opened up one of my trusty favorites: Rachael Ray’s Cooking Round the Clock. I received it as a gift about ten years ago and it was my first RR cookbook. Boy, did I love that book! This has been one of my favorite recipe combos for years. I could probably make it in my sleep.
- Cucumber Hummus – I had half a cucumber I needed to use so I decided it was time to try this hummus recipe I’ve been seeing all over Pinterest lately. It’s definitely different from your typical hummus recipe, but it’s still a keeper. The cucumber gives it an unexpected fresh flavor and works nicely with the typical hummus ingredients.
The Boy and his puniness has kept us at home most of the week, but we’re on the up and up. Hopefully we’ll be able to leave the house by Sunday.
Although we’ve not been out much this week, I’ve been blown away by the view outside. If this is all I get to see in one week, well, it’s more than I deserve. I can’t even begin to comprehend God’s beauty, but these glimpses of His glory just take my breath away.
