It’s still cold and still crazy around here, but good things were happening here this week.
We got a decent dose of snow in the beginning of the week and I’m so glad we got it out of the way. We had all sorts of house inspections happening and they were all very time sensitive.
We’re grateful that the weather here didn’t mess with our appointments, but a little bummed about the outcome. It turns out that the house we were buying is a hot mess, but it’s the kind of hot mess that you learn about when the professionals walk in the door. The house hunting continues…
Also, just because it’s pretty darn exciting, Prissy is finally making good progress with the potty chart. No need to bore you with details and become one of those TMI moms, but filling this potty chart with stickers is an awesome thing.
1. Roasted Broccoli and One-Pot Pizza Pasta- Our favorite broccoli showed up once again. We really do love this stuff! This time it was paired with One-Pot Pizza Pasta and, ohmygosh, it was so good. You have got to try this stuff!
2. Roasted Potatoes- these roasted potatoes were the result of some experimenting years ago. These are just diced potatoes tossed in EVOO and Montreal Steak Seasoning. Yep, you read that right: steak seasoning. After coating in seasoning mix and EVOO, just throw them in the oven (375 degrees is perfect) on a baking sheet for about 30 minutes.
3. Ham & Swiss Stromboli– I’ve been making variations of this Stromboli recipe for years and it’s never disappointed. It’s easy and low-cost, but completely delicious.
4. Meatball Subs– You’d think the kids loved these. Not so much. The adults, on the other hand, were perfectly happy with these sandwiches. I’m interested in trading the frozen meatballs for some homemade ones next time, but we’ll see what happens. For now we’re happy to have enough of these to use for leftovers tonight.
