The Rundown: Week in Review

Can I get a Go Blazers?  My UAB Blazers started off March Madness by busting brackets left and right.  Not my bracket though.  Mine’s just fine right now.

(Had to go ahead and get that out of the way since my social media feeds are flooded with outcome of that UAB/ Iowa State game.)

Now that we’ve taken care of that, my goodness, it’s been a beautiful week!  We found ourselves outside quite a bit and loved every minute of it.

It was a perfect week to have some of our homeschool fun outside.  We were happy to have Dad around to help out with an project involving Orville and Wilbur Wright and different styles of paper airplanes.  Obviously the best part was testing them out.  We also took advantage of the weather and enjoyed a spring scavenger hunt in lieu of formal science this week.  I’m pretty excited to have a couple more of these planned over the next couple of weeks.

They did get some inside work done.  Prissy was rolling along with our Letter of the Week fun and the star for this week was Letter K.  The Boy also had a good week.  Along with house outside time, he particularly enjoyed learning about Egyptian embalming practices and his monthly Magic Tree House Club meeting (through CurrClick*).

We had lots of good stuff happening at the table this week, but these were my favorites.

  •  This Slow Cooker Enchilada Lasagna was enjoyed by all of my people and that’s not an easy feat!  I came across this recipe when my new edition of Kraft Food and Family arrived in the mail last week.  This is a great slow cooker recipe, but keep in mind that it’s not one that needs all day to cook.  Four hours on low is all you need to make this one happen.  
  • When I tried Rachael Ray’s Shallot Spaghetti a few years ago it was the first time I had ever cooked with shallots.  It didn’t take me long to love them.  This recipe is a great way to let shallots have the spotlight and they’re extra delicious because they’re caramelized with garlic. Yum.  
  • Easy Taco Salad – I can’t think of many things better than throwing my favorite taco toppings on some chips and then broiling them for a few minutes.  It’s pretty much awesome.  
That’s about it here.  We’re busy enough, but it’s kind of a calm before the storm in some ways. Over the next couple of weeks we’ll be thrown into the hopefully temporary chaos that comes with packing and moving.  Until then, we’re just going to slow down and enjoy the semi-calm.
