The Rundown: Week in Review

You guys, it’s been gorgeous here this week!  It’s been all we can do to get anything done.  Seriously though….

Homeschool

The Boy came down with a severe case of spring fever.  I can’t blame him, but more often than not I’d catch him just staring out the sliding doors watching the clouds roll by. It was just one of those weeks.  He was able to keep up with enough of his work to keep his head above water, but this spring fever did a number on my lesson plans.  We did try to take advantage of our outside time by studying some of the activity happening at the pond.  Between that and the geese nesting in the back yard, it’s all going down as observation time. 

Prissy also spent a good bit of time outside with us and picked every flower in sight.  Thankfully she was able to focus long enough to get acquainted with Letter J.  When she wasn’t working on Letter J, she was practicing pattern recognition and shape tracing.

The Food

There was good stuff happening around the table.  Here are my favorites from this week.

  1. Pizza for One – I wish I could give credit where credit is due, but I can’t remember who posted this.  All I remember is that it showed up in my Instagram feed a few weeks ago and I thought it would be great for lunch.  It hasn’t disappointed!  It’s simply a tortilla, half a wedge of Laughing Cow cheese, roasted red peppers, and pepperoni. Once it’s assembled, pop it in your oven for a few minutes. 
  2. This recipe for One Pan Chicken Alfredo was no joke.  It’s not often that I can say *everyone* in this house was happy with dinner, but we killed that pot!  There was nothing left.  You owe it to yourself to try this one. 
  3. Sometimes I like to go all out and make the Cook’s Country Magic Chocolate Flan Cake and sometimes I just want to be a slacker and take the Betty Crocker shortcut.  This was Betty’s week and, while deep down I know making it from scratch is better, I needed the shortcut.  I can’t say that I missed out on anything by going the Betty Crocker route.  This Chocoflan was still beautiful, delicious, and a great texture and flavor combination. 
  4. Oh how I loved the flavors in this Chickpea, Avocado, and Feta Salad.  I love these ingredients individually, so naturally putting them in a bowl together and letting them swim around in lime juice gave me a Jerry McGuire “You had me at hello” experience.  Yep, I loved it that much. 
 The Rest of It

I know you get the picture already, but the skies were so perfectly blue and the temperature was lovely.  Outside was calling our names over and over again this week and we took advantage of it.  Our God was showing off big time!

Besides this gorgeousness that surrounded us all week, we were also a little distracted by our house hunting process.  Hubby and I were ready to make an offer on a house we saw last week and decided it was time to let the rest of our crew check it out.  After all, they have to approve too.  Everyone has given the green light and now we’re signing papers left and right.  Hopefully all of this madness will be over soon and we can get back to normal kind of crazy.  That makes sense, right?
