The Rundown: Week in Review

Y’all, this hasn’t been our most productive week.  Between a couple of gorgeous spring days and house hunting, it’s been a little tough to keep our focus.  Since it’s downright cold again, I’m thankful that we’ve had some time outside this week. 

As for the house hunt, we’ve seen a couple of interesting houses this week.  Both were great homes, but neither was a good match for us.  The search continues…

 Homeschool
The Boy was a trooper through all of the distractions of the week.  He carried on like a pro!  (In all fairness, he pretty much is a pro.)  From art co-op to keyboarding to all of our normal subjects, he didn’t miss a beat this week! I don’t often leave him to do his work without me nearby, but it’s nice to know that he can handle it when necessary.

Prissy’s week in homeschool has been a little challenging.  Her focus has been Letter I this week.  Letter I presented the challenge of looking at the same letter in different fonts.  She’s not a fan of capital “I” looking so different all the time. 
 
I ran into this problem before with The Boy when he was younger and I’ll never understand why there’s such inconsistency in this area.  I’m so appreciative of all the bloggers who offer free printable packs, but we even found different fonts used within the same packets.  Luckily she’s got time to overcome this confusion; we’ll keep trucking along and it will click for her soon enough. 

The Good Stuff

There was plenty of yumminess happening around our table.  These are just a couple of my favorites from this week.

  1. If you’ve ever been to Jim ‘N Nick’s, you probably smile at the mere thought of their cheese biscuits.  They have amazing food there, but you could probably just eat the biscuits and walk away happy.  Now that the closest Jim ‘N Nick’s is nearly four hours away from me, I’m especially happy to have this recipe for Jim ‘N Nick’s-Style Cheese Biscuits.  I’ve been making these for years and can honestly say that they’re not a perfect knock-off, but they’re close enough for me.  Also worth noting, this recipe calls for 3 Tbsp. of sugar, but I find that 1/4 cup – 1/3 cup is a little closer to the sweetness in the Jim ‘N Nick’s recipe. 
  2. I really enjoyed this Lasagna Soup.  The Boy, however, loves lasagna and said that coming this close to lasagna without actually making it wasn’t nice of me. 
  3. Chicken Bacon Ranch Casserole  Chicken.  Bacon.  Ranch.  Cheese.  No other words are needed. 
  4. I couldn’t bring myself to buy the blackberry filling for this Crockpot Blackberry Dump Cake.  It was twice as much as the cherry filling!  So, I decided we’d do Cherry Dump Cake instead.  FYI, this is ridiculously good when paired with vanilla ice cream.
